ELABORATION

Manual harvest. Alcoholic fermentation with selected yeasts in closed stainless steel tanks of 8 and 17 tons. 4 days of cold maceration, total duration of maceration: 21 days. Malolactic fermentation in barrels for 3 months.

TECHNICAL DATA

Appearance: Deep ruby ​​red with a good hue; elegant and dark.

Nose: The spices expressed in white and black pepper are amalgamated with cassis and floral aromas.

Pale: It has a very good entry. You can appreciate the bitter chocolate and subtle notes of mint. Cocodrilo is a very complex, mineral wine, with good concentration and intensity, marked, round and sweet tannins with a long finish.
