Elaboration
After the reception of the grapes in the winery, a selection of bunches is made. It is uncovered and the maceration tank is loaded. Before sowing with yeasts, a pre-fermentative maceration is carried out at 8 ° C for 5 days. During this period 2 daily pigeages are carried out. Fermentation: Once the cold maceration is finished, it is sown with selected yeasts. The fermentation is conducted at a temperature of 28 ° C. Its duration is approximately 10 days. Maceration: The total maceration time is 21 days in contact with the skins of the grapes. As an extraction work, 4 to 6 pumpovers are made daily during the first 4 days of fermentation. Two delestages are associated with these works in that same period. When the fermentation ends, the tank is filled with wine of the same quality to meet the 21 days of maceration with a full tank. Finally it is uncovered and the wine is separated from the wine press drop. Only drop wine is used in this product. Malolactic fermentation takes place in the tanks before aging in barrels.
