Harvest: Manual, March 5, 2007. Alcoholic fermentation:

Fermentation takes place in small tanks. Once the wine is finished, it is placed in new French oak barrels.

The wine is raised in these barrels for a period of time such that they give it the structure that the concentration of the fruit needs.
