After 9 years of knowing the whole farm, the barracks that best express the elegance, concentration and typicity of Malbec were selected. Barracks 5 and 9 are the ones that have been selected for La Violeta.
HARVEST
Marcelo Pelleriti walks the vineyard and tastes the grape, it is he who decides the harvest day. It is done manually in small plastic boxes of 12 kg.
SELECTION

MICROVINIFICATION
A shelling of each bunch was done by hand and then the staining in French oak barrels for a cold maceration at 8 ° C for 20 days. Then the fermentation process begins, the barrels are rotated and the pigeage is carried out manually manually.
BREEDING
24-36 months in new French oak barrels, and 5 years of stowing in bottle.
