AGING / BARREL
20 months in barrel with 3 rackings. Malbec: French oak (Allier) / medium-plus toast. Syrah: American oak / Medium toast. Stainless steel tanks for 3 months.
ELABORATION
Selection: Manual selection, destemming and grinding of the grains. Maceration: 20 hours of maceration prior to fermentation at 4º C. Use of other techniques: délestages. Alcoholic fermentation: in stainless steel tanks for 15 days between 25 and 29º C. Use of selected yeasts: Saccharomyces cerevisiae (Bayanus). Post-fermentation maceration for 10 days. Direct transfer to barrels. Malolactic fermentation: 100% natural malolactic fermentation.
