AGING / BARRICADO
Each of the varietals is made individually and aged in new French oak barrels for 12 months. Then the Blend is made and allowed to stand in new French oak barrels for another 6 months to create and harmonize the characteristics of each varietal.

Harvest: At the moment of full polyphenolic maturity, during the early morning, manually with small boxes. Vinification: Grain selection manually, pre-fermentation maceration with dry ice. Delestage and post-fermentation maceration for 10 days.
