Harvest Method
By hand.

Vinification
10% bleed-of. Cold maceration at 6º for 10 days, alchoholic fermentation
with indigenous yeast in french oak barrels for 32 days between 29 -
32ºC, with 4 daily punch-downs. Melolactic fermentation in oak during 35
days. No stabilization, no filtration, no clarification.

Ageing
24 month in 100% new french oak barrels.

“Reveals more development in its enticing perfume from its estended stay in
bottled. Notions of sandal wood, exotic spice, dried hebs, and assorted black
fruits lead to a still tight, dense, structured wine in need of 3-4 years of
cellaing. It has all the rigth stuff but patience will be required. Its drinking
window will extend from 2015 ti 2023. The grapes are sourced from old wines
