Weather

Continental climate, with a wide temperature difference between day and night, and marked seasons that contribute to the good growth of the plant. The height and its microclimate are ideal for the grapes of this red wine because they give them a unique character. Good brightness, with many hours of sun.

Soil and strains

A characteristic that makes this wine unique is that it is the product of a natural crossbreeding in the vineyard of ancient vines of Cabernet Sauvignon and Cabernet Franc. The sector of the farm from which the grapes are obtained is sandy loam, with stones of regular size at medium depth. No chemical herbicides are used on the farm and biodynamic practices are used for care and treatment.

Winemaking

The harvest of the grapes for this wine is done manually in the morning to enter the cellar with the fruit at low temperature and is carried out in boxes of 18 to 20 kilograms. Selection of clusters, destemming and subsequent selection of grains. Cold maceration between 7 and 10 days at a temperature of 15 ° C to 18 ° C. Classic fermentation with selected yeasts in small stainless steel tanks (6,000 liters capacity) with controlled temperature (between 25 ° C and 28 ° C), with traces and délestages. After the alcoholic fermentation is finished, 100% of the wine goes into new barrels where it carries out its malolactic fermentation and is aged for 18 to 20 months. Stabilized, filtered and bottled. Minimum stowage in warehouse of 18 months.

Winemaker comments

The dry and warm climate of 2009 resulted in excellent raw material for this red of great character and personality. It is a field blend (blend of vineyards) of plants that naturally grew mixed in a sector of the farm, which gives the wine a unique and unrepeatable style, of great subtlety and elegance.
