OUR PHILOSOPHY
“Making a great wine is an act of generosity, of always thinking of others
who will test it Our mission is to produce limited series of large
wines, proudly made in Argentina.
VINEYARD
. Location: grapes from barrack 23 in the vineyards of “Don
Antonio” in the Uco Valley.
. Height above sea level: 1,200 meters.
. Composition: 100% Pinot Noir.
. Age: Planted in 1994.
. Yield per hectare: 10,000 bottles/ha.
HARVEST
. Brix: 24.5°
. Manual harvest in boxes of 18 kg.
VINIFICATION
. Harvest and manual selection of bunches and grains in the cellar.
. From 12 to 24 hours of pre-fermentation maceration between 5 and 8 ºC.
. Alcoholic fermentation in open-air stainless steel tanks
and concrete pools.
. Spontaneous malolactic fermentation in concrete pools.
. Aged for 9 months in French oak, 50% in second-first-use barrels and 50% in third-use barrels.
. Alcohol: 14.5%
. Total acidity: 5.80 g/l (tartaric acid).
. pH: 3.73.
. Sugar: < 1.80 g/l
. Production: 500 boxes.
