100% in French oak barrels for 12 months (two thirds new and one third second use)

winemaking
Manual harvest of the different plots between the beginning and the middle of April. Transport to the warehouse in boxes, to minimize the breakage of berries, and refrigeration (10°C for 24 hours). The clusters were manually classified on selection tables, destemmed and taken by gravity to small concrete pools. The fermentation was spontaneous, initiated by the native yeasts of the vineyard. Frequent pigeages and pumpovers were carried out during fermentation to favor the extraction of aromas, color and tannins from the skin of the berries to the must. The total incubation time was 28 days. The new wine was separated from its pomace, which was pressed in a basket press. Malolactic fermentation occurred spontaneously in the pool. Then, 225 and 600 liter barrels were filled to start the aging period.

Tasting notes
An intense and wild wine like the Terroir from which it comes. On the nose it offers aromas of forest fruits such as blueberries, and tropical notes reminiscent of sweet guava. In the mouth it is powerful, broad and refreshing acidity. The notes of aging such as fresh butter and vanilla are also perceived.

Pairing
Intense dishes, rich in aromas and flavors. Grilled red meats, lamb with herbs or well-seasoned caramelized grilled vegetables.
