Manual harvest of the different plots between the beginning and the middle of April. Transport to the warehouse in boxes, to minimize the breakage of berries, and refrigeration (10°C for 24 hours). The bunches were manually classified on selection tables, destemmed and taken by gravity to small concrete rafts. The fermentation was spontaneous, initiated by the native yeasts of the vineyard. During fermentation, frequent pigeages and pumping over were carried out to favor the extraction of aromas, color and tannins from the skin of the berries to the must. The total incubation time was 28 days. The new wine was separated from its pomace, which was pressed in a basket press. Malolactic fermentation occurred spontaneously in the raft. Then, 225 and 600 liter barrels were filled to start the aging.

Tasting notes
Very deep violet in color, this wine has aromas reminiscent of fresh fruit with floral notes. On the palate the attack is round, with extremely sweet tannins and a great harmony between the wine and the wood.
