14 months in new French oak barrels with two rackings that allow the natural sediments of the wine to be eliminated and provide the necessary oxygen for its good evolution.
winemaking
The manual harvest is carried out in small boxes of 17 kg. The clusters are carefully deposited on a double selection table, where the best berries are chosen. The grapes are carefully separated from the stems and transported by elevator in small stainless steel tanks to 52 hectoliter epoxy cement pools. A pre-fermentative maceration is carried out for 3 days at a temperature of 5°C. Alcoholic fermentation is carried out using natural yeasts from the fruit, for 8 to 10 days, with frequent manual pigeage. The process ends with a prolonged maceration at 28°C.

Tasting notes
Power, intensity and precision are the essence of this vintage. Alto 2018 shows an intense bright ruby ​​red color. On the nose, notes of fresh fruit, sour cherries, blackberries and guava stand out, as well as spicy notes of bay leaves. Its passage through barrels adds subtle notes that give them an aromatic depth . In the mouth it is full and solid, with an agile attack, but it gains weight and texture on the finish. Firm wine, with excellent acid structure and great aging potential.
