During the cool March mornings, we manually harvest the organic grapes from a small plot of super calcareous soil at our Finca Ayni in Paraje Altamira, Valle de Uco, Mendoza. These Malbec grapes, once destemmed, enter the concrete pools where they begin their fermentation spontaneously thanks to their indigenous yeasts. With natural acidity, without clarification (vegan certificate), or filtering. Its aging is usually 18 months in 500 liter German oak barrels. Our Ayni gravels malbec in the glass is intense, with a purple red color and high depth. On the nose it unfolds its complex, elegant and expressive character that refers to black fruit, balsamic notes, undergrowth and subtle tertiary notes. In the mouth it impresses with its elegance, freshness, its profile of black fruit and ripe red figs, together with its long-lasting flavor persistence. That is why we recommend our organic Ayni Gravas Malbec for those palates that enjoy full-bodied and highly complex red wines. It is ideal to accompany braised, slightly fatty foods, curanto and spicy pot foods.
