During the cool March mornings, we harvest the grapes manually at our Ayni estate located in Paraje Altamira, Valle de Uco, Mendoza. These Malbec grapes, once destemmed, enter the concrete pools where they begin their fermentation spontaneously thanks to their indigenous yeasts. With natural acidity, without clarification, it has a vegan certificate. It is usually aged for at least 12 months in 5,000-litre untoasted German oak barrels and in new and used 500-litre barrels. Our Ayni Malbec is intense in the glass, with a purple red color and high depth. On the nose it expresses its complex and elegant character reminiscent of black fruit. In the mouth it enters vibrantly, its natural acidity is felt, its fruity profile reminiscent of currants mixes with aromas of pure chocolate along with spices and a durable persistence. That is why we recommend our Ayni Malbec for those palates that enjoy full-bodied and highly complex red wines, ideal to accompany dishes with character, somewhat greasy and spicy.

Climate
Average temperatures with good thermal amplitude, relatively higher humidity than other areas of Mendoza.
Aging
In concrete pools without expoxy and oak barrels of 5000 thousand liters without toasting and new and used barrels of 500 liters for 12 months.
